When it comes to keeping female hormones in balance, salmon is high on the list. Full of anti inflammatory omega 3 essential fatty acids, vitamin D, selenium and blood sugar-balancing protein, we should be aiming for two portions of oily fish a week.

This is even a hit with the kids and quick to assemble and get in the oven when time is tight.
Ingredients

Serves: 4
- 4 salmon fillets
- 100g cream cheese
- handful of parsley or basil, chopped (optional)
- 2 tbsp pesto
- 1 clove of garlic, crushed
- 50g panko breadcrumbs
- salt and pepper to season
METHOD
- Heat the oven to 200C and line a baking tray with parchment.
- Place the salmon fillets in the tray, skin side down.
- Meanwhile, in a large bowl add your cream cheese, garlic and pesto. Mix.
- Using a spoon spread the mixture equally over the top of the salmon fillets.
- Sprinkle over panko bread crumbs.
- Place in the oven for approximately 17 minutes or until salmon is cooked through and flakey.
- Garnish with chopped basil or parsley before serving.

This salmon is delicious warm straight out of the oven but can be stored in the fridge for 3 days in an airtight container and eaten cold or reheated.
