Baked Pesto Salmon

When it comes to keeping female hormones in balance, salmon is high on the list. Full of anti inflammatory omega 3 essential fatty acids, vitamin D, selenium and blood sugar-balancing protein, we should be aiming for two portions of oily fish a week.

This is even a hit with the kids and quick to assemble and get in the oven when time is tight.

Ingredients

Time: 20 min

Serves: 4

  • 4 salmon fillets
  • 100g cream cheese
  • handful of parsley or basil, chopped (optional)
  • 2 tbsp pesto
  • 1 clove of garlic, crushed
  • 50g panko breadcrumbs
  • salt and pepper to season

METHOD

  • Heat the oven to 200C and line a baking tray with parchment.
  • Place the salmon fillets in the tray, skin side down.
  • Meanwhile, in a large bowl add your cream cheese, garlic and pesto. Mix.
  • Using a spoon spread the mixture equally over the top of the salmon fillets.
  • Sprinkle over panko bread crumbs.
  • Place in the oven for approximately 17 minutes or until salmon is cooked through and flakey.
  • Garnish with chopped basil or parsley before serving.

This salmon is delicious warm straight out of the oven but can be stored in the fridge for 3 days in an airtight container and eaten cold or reheated.
